Tasty Tuesday: Great 24 Hour Chicken Marinade

Who doesn’t love great grilled or roasted chicken? This is a simple marinade that always pleases everybody. The key is to marinate the chicken for at least 24 hours before cooking. It works on any piece of chicken and is not as strong as bbq sauce. It’s more about keeping the meat tender & juicy. Add some of your favorite spices to make it perfectly suited to your family’s flavor style!

Great 24 Hour Chicken Marinade

3/4  to 1 cup olive oil based salad dressing (pick any-there are tons out there)

1/4 cup soy sauce

1/2 tsp garlic powder

1/2 tsp onion powder

dash or two of hot sauce

about 8 chicken pieces (any type-I used thighs here)

Mix all the ingredients together with a wisk. Toss chicken pieces into a large ziplock bag and add the marinade. Place in a bowl or shallow baking dish in the refrigerator for 24 hours or more. Then drain off the marinade from the chicken and grill on a bbq or roast in the oven until done.

Note: The chicken shown above was slow roasted in the oven.

  5. Looks great Heather!! How long and at what temp was it slow roasted?? I hate trying to grill chicken, always burn it trying to make sure its cooked through.. :)
