Tasty Tuesday: Sweet Coconut Chicken
I found this in an old slow cooker recipe book and it came out good enough to share! It’s a very light and subtle flavor, but creates the most moist chicken! I made mine with boneless, skinless chicken thighs (cut up) and I added in about 3 red potatoes (cut up). Then I served it over hot brown rice. The memory is delicious!

1/2 cup coconut milk
1/2 cup water
8 chicken thighs
1/2 cup brown sugar
2 Tbsp. soy sauce
2 garlic cloves, minced
1/8 tsp. ground cloves
Combine coconut milk & water. Pour into a slow cooker sprayed with cooking spray. Add remaining ingredients in the order listed. Cover and cook on low for 5-6 hours.
