Tasty Tuesday: Creamy Turkey Stroganoff

This was the best creamy turkey stroganoff I’ve ever prepared. I like classic beef stoganoff a lot, but the calories in the rich original version are just not worth sacrificing very often. This lightened up version of mine doesn’t sacrifice the satisfying comfort food qualities many of us crave. I topped extra wide egg noodles with this batch, but I also love it on top of mashed potatoes. I usually serve it aside green beans or peas.

Seriously Creamy & Seriously Tasty!!!

Creamy Turkey Stroganoff

3 turkey patties (defrosted)

1 can cream of mushroom soup

1 cup fat free sour cream

3-4 cups mushrooms (sliced thick)

1/4 – 1/2 cup beefΒ  broth

1 onion (chopped)

2 tbsp’s fresh minced garlic

1 tsp salt or to taste

1 tsp pepper or to taste

1 tbsp garlic powder

1 tbsp butter

1 tbsp olive oil

2 tbsp’s flour

1/2 tsp paprika

sliced green onions for a garnish

Melt butter and olive oil. Add onions & garlic and saute for 3 minutes. Stir in turkey, garlic powder, flour, salt, pepper, & paprika. Cook until the turkey is about 1/2 way cooked through. Add in mushrooms and continue cooking until both the turkey and mushrooms are cooked through. Add in the soup & broth. Simmer uncovered for at least 10 minutes. Remove from heat and add in your sour cream. Stir well & check for seasonings by tasting. Adjust as needed. Garnish with sliced green onions.

Serve over extra wide egg noodles or on top of mashed potatoes.
